Menu Plan Monday

Another week with a menu plan! As I stated last week, I don’t plan specific meals to specific days. I just try to plan a certain amount of dinners for the week and then choose what meal depending on how our day is going or what we are craving. On the menu this week:

  • Tacos for Ryan & taco salad for me
  • Penne with tomato sauce, mushrooms, onion, and zucchini
  • Pepperoni, sausage, olive, and mushroom pizza (homemade)
  • Tortilla Bean Pie
  • Greek Pizza (spinach, onion, Kalamata olives, feta)
  • Chili dogs

I managed to get 3 meatless meals in there this week! Of course the pepperoni and sausage pizza and the chili dogs kind of counteract the goodness of 3 meatless nights.

  1. Ooh, that makes me think of the pesto pizza Ryan used to make that was so delicious…is that still on the menu?
    Tacos are a big hit over here. It’s one of the only things that *everybody* will eat! (so how dare I go and decide that I only want veggie tacos? I mean, really! LOL)

    We have no plan this week. I’m still too sick to cook very much, so C loaded up on frozen convenience-type things like Amy’s dinners. I did ask him to buy lots of beans and veggies, so I could throw them over brown rice. Does that count? 🙂

  2. You know we haven’t had pesto pizza in ages, I should go find that recipe. I think it was from one of our pizza cookbooks, hmm. Of course we always called it pond scum pizza which is a really unappetizing name. 🙂

    I finally fell in love with the fried flour tortillas that Ryan likes (we found a brand that makes these yummy layers when fried) for his tacos and then had my gallbladder out, since then eating the fried tortillas makes me horribly ill. It is so unfair! And weird, Ryan’s fried egg rolls don’t make me sick, french fries are fine, but the tortillas kill me! So now I just make a salad using fritos for the base, still yummy but not the same.

    We’re having chicken tacos this week but I was thinking of trying tempeh ones, this recipe intrigued me: http://www.macheesmo.com/2011/01/crispy-tempeh-tacos/

    We always fall back on convenience foods during illness too. No one wants to cook when they’re all icky. Hope you feel better soon.

    Could you tolerate corn tortillas for your tacos? If you buy the more authentic ones (or make ’em!) they are quite delicious. Garden of Eatin’ makes great pre-fried ones that aren’t very greasy.
    I’ve never tried tempeh, though I have been wondering about it. I love tofu, and I’ve heard tempeh is even easier to digest — a bit healthier, I believe? But it also reminds me a bit suspiciously of that time we decided to try Quorn –OMG so disgusting! *gags*

  4. That’s so funny, my inlaws use Quorn a lot (several of Ryan’s siblings & spouses have gone veg) and everyone loves it but I’ve refused to buy it– no cheaper than chicken! I used to eat the corn tortillas before we found this brand of flour ones I loved fried. I have been unwilling to test it, I think I prefer the salad over fritos to the corn tortillas anyway. It’s just this brand of flour tortillas made such wonderful layers when fried! Mmm! But I’ll look for Garden of Eatin’, I haven’t had much luck making tortillas at home.
